Mother Nature has been teasing us a bit here in the Chesapeake. Sunny, warm days in the middle of February? I know the cold weather cannot be over with already. At least I'm trying to not get my hopes up. A little sprig of forsythia in the bathroom has blossomed, satiating my need for spring (at least for now).
In order to prepare my freezer for the upcoming growing (and eating) season, I started a big pot of vegetable stock this morning. Asparagus ends, broccoli stalks, carrots, and chives from the stock box. The smell is so heartening as the wind gusts blow around the little house.
This weekend will be a good one for cooking. Butternut squash and quinoa soup out of one of the vegan cookbooks borrowed from the library. And perhaps some crock pot banana nut bread using some of the many frozen bananas that seem to have multiplied like rabbits in the freezer.
